Sweet Corn Fritter Stack

Sweet Corn Fritter Stacks are cheap and easy to make. The perfect recipe for an older couple who are only cooking for two or double/triple the recipe for a whole family. Great for any time of the day and quick and easy to whip up for visitors. 

Ingredients
1 can of creamed sweet corn
3/4 c flour
1tsp baking powder
1 egg
Salt and pepper
A little oil for frying
Handful of baby spinach
Bacon pieces
Sour cream and sweet chilli sauce to decorate

Instructions
Mix the corn, flour, baking powder and egg together. 
Heat some oil in a pan and then scoop tablespoons into the frying pan and spread out a little with the back of a spoon. 
After a couple of minutes and the fritters start to bubble flip over for another minute or so. 

If making a big batch pop in a warm oven until ready. 

To assemble stack start with fritter, spinach, bacon and repeat. Drizzle with sweet chilli sauce over a dollop of sour cream if you desire. 

You can stack the fritters with whatever you have on hand and add a side salad if you wish. This recipe is quite versatile and can be made GF and the fritters are also vegetarian friendly.
