As part of our Recipes Made Local week, our friend Natalie from Our Mangawhai Garden has donated TWO ingredients packs for families to make her delicious MINESTRONE SOUP!

Our Mangawhai Garden create organic and spray-free produce boxes that make your life easier and allow you to eat healthy daily.

1 onion
1 clove of garlic
Oil to saute
1 tin tomatoes
1 tin cannellini bean (borlotti, black or kidney would work)
50g tomato paste
400g chopped veg( I used carrot, potato, courgette, capsicum but its flexible)
100g dried pasta
650g water(could use a small veg stock)
2tsp mixed herbs
1tbsp sugar
Salt and pepper
Saute onion and garlic on a pan with the oil for a couple of minutes then add all the ingredients, bring to boil and then simmer for 20mins.
